Spirulina Mushroom and Spinach Crepes

1 cup whole wheat flour or oat flour
1 tablespoon Earths Basket Spirulina Powder
1/2 cup chopped spinach
1 1/4 cups plant-based milk (such as almond milk or oat milk)
2 tablespoons melted coconut oil or olive oil
Pinch of salt
2 cups sliced mushrooms (such as button or cremini)
1 tablespoon Earths Basket Magic Shrooms Powder
1 small onion, diced
2 cloves garlic, minced
2 tablespoons olive oil
Salt and pepper, to taste
Fresh parsley or thyme, for garnish (optional)
In a large mixing bowl, whisk together the whole wheat flour or oat flour, spirulina powder, chopped spinach, plant-based milk, melted coconut oil or olive oil, and a pinch of salt. Stir until the batter is smooth and well combined. Let it rest for 10-15 minutes.
Heat a non-stick skillet or crepe pan over medium heat and lightly grease it with oil or cooking spray.
Pour a ladleful of the crepe batter into the pan and swirl it around to form a thin, even layer. Cook for 2-3 minutes until the edges start to brown and the crepe is set. Flip the crepe and cook for an additional 1-2 minutes. Repeat with the remaining batter.
While cooking the crepes, prepare the mushroom filling. In a separate pan, heat olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion becomes translucent.
Add the sliced mushrooms to the pan and cook until they become tender and golden brown.
Stir in the Earths Basket Magic Shroom powder and season with salt and pepper to taste. Cook for an additional minute to allow the flavors to meld.
To assemble, place a spoonful of the mushroom filling onto one side of each crepe and fold it over to create a half-moon shape. Repeat with the remaining crepes and filling.
Serve the Spirulina Mushroom and Spinach Crepes warm, garnished with fresh parsley or thyme if desired.
