Spirulina Broccoli Soup with Horseradish and Parsley Chips

Ingredients:
2 tablespoons olive oil
1 small onion, chopped
2 cloves garlic, minced
4 cups broccoli florets
3 cups vegetable broth
1 teaspoon Earths Basket Spirulina powder
1/2 cup coconut milk
Salt and pepper to taste
Horseradish sauce for garnish
Fresh parsley leaves for garnish
For the Parsley Chips:

Method:
STEP 1
In a large pot, heat the olive oil over medium heat.
STEP 2
Add the chopped onion and minced garlic to the pot and sauté until softened and fragrant.
STEP 3
Add the broccoli florets to the pot and cook for a few minutes until slightly tender.
STEP 4
Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to a simmer and let it cook for about 10-15 minutes until the broccoli is fully cooked.
STEP 5
Remove the pot from the heat and let the mixture cool slightly.
STEP 6
Using an immersion blender or in batches in a regular blender, blend the soup until smooth and creamy.
STEP 7
Return the soup to the pot and place it back on the heat.

Stir in the Earths Basket Spirulina powder and coconut milk. Mix well to combine.

Season with salt and pepper to taste.

In a separate pan, heat a small amount of olive oil over medium heat.

Fry the parsley leaves for a few seconds until crispy. Remove them from the pan and place them on a paper towel to absorb any excess oil. Sprinkle with salt.

Ladle the Spirulina Broccoli Soup into bowls and garnish with a drizzle of horseradish sauce, a few parsley chips, and fresh parsley leaves.
