Gluten-Free Ashwagandha Cookies

Ingredients:

1 ½ cups gluten-free flour blend (such as a mix of rice flour, tapioca flour, and potato starch)

½ cup almond flour

1/4 cup Earths Basket Ashwagandha powder

½ teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup coconut oil, melted

¾ cup coconut sugar or other natural sweetener of your choice

1 teaspoon vanilla extract

1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water)

½ cup sesame seeds, for coating

½ cup rolled oats, for coating

½ cup chopped almonds, for coating

Method:

STEP 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

STEP 2

In a large mixing bowl, combine the gluten-free flour blend, almond flour, Ashwagandha powder, baking powder, baking soda, and salt. Stir well to combine.

STEP 3

In a separate bowl, whisk together the melted coconut oil, coconut sugar, vanilla extract, and flax egg until well combined.

STEP 4

Pour the wet ingredients into the dry ingredients and mix until a dough forms.

STEP 5

In three separate shallow bowls or plates, place the sesame seeds, rolled oats, and chopped almonds.

STEP 6

Take tablespoon-sized portions of dough and roll them into balls.

Roll each dough ball in the sesame seeds, oats, and chopped almonds, pressing lightly to coat the surface.

STEP 8

Place the coated dough balls onto the prepared baking sheet, leaving some space between each cookie.

STEP 9

Gently flatten each cookie with the back of a spoon or your palm to create a cookie shape.

STEP 10

Bake for 12-15 minutes, or until the edges are golden brown.

STEP 11

Remove from the oven and let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
