Ashwagandha Orange Sweet Bread

Ingredients:

2 cups whole wheat flour

1/2 cup almond flour

1/4 cup Earths Basket Ashwagandha powder

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup coconut oil, melted

1/2 cup maple syrup or honey

2 large eggs (or flax eggs for a vegan option)

1/2 cup fresh orange juice

2 tablespoons orange zest

1 teaspoon vanilla extract

Method:

STEP 1

Preheat your oven to 350°F (175°C) and grease a loaf pan.

STEP 2

In a large mixing bowl, whisk together the whole wheat flour, almond flour, Ashwagandha powder, baking powder, baking soda, and salt.

STEP 3

In a separate bowl, whisk together the melted coconut oil, maple syrup or honey, eggs (or flax eggs), orange juice, orange zest, and vanilla extract until well combined.


STEP 4

Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix.


STEP 5

Pour the batter into the greased loaf pan and smooth the top with a spatula.


STEP 6

Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.


STEP 7

Remove the bread from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing.
