Chocolate No Bake Energy Bites

For the Energy Bites:
1 cup dates, pitted
1 cup almonds (can be ground into flour or finely chopped)
2 tablespoons Earths Basket Cacoa Powder
2 tablespoons almond butter
1 tablespoon maple syrup or agave nectar
1 teaspoon vanilla extract
Pinch of salt
For the Cacao Butter Chocolate Dip:
1/2 cup Earths Basket Cacoa Butter
1/4 cup Earths Basket Cacoa Powder
2 tablespoons maple syrup or agave nectar
Pinch of salt
Chopped nuts, shredded coconut, or Earths Basket Cacao Nibs for rolling the energy bites
In a food processor, blend the dates until they form a sticky paste.
In a large mixing bowl, combine the date paste, almond flour, cacao powder, almond butter, maple syrup or agave nectar, vanilla extract, and a pinch of salt. Mix well until all ingredients are thoroughly combined.
Take about 1 tablespoon of the mixture at a time and roll it into bite-sized balls using your hands. Place the energy bites on a baking sheet lined with parchment paper.
Optional: Roll the energy bites in your choice of chopped nuts, shredded coconut, or cacao nibs to add extra texture and flavor.
Place the energy bites in the refrigerator to set while you prepare the chocolate dip.
For the chocolate dip, melt the cacao butter in a heatproof bowl over a saucepan of simmering water. Once melted, remove from heat and whisk in the cacao powder, maple syrup or agave nectar, and a pinch of salt. Mix until smooth and well combined.
Dip each energy bite into the chocolate dip, coating it completely. Use a fork or a dipping tool to remove the coated bite, allowing any excess chocolate to drip off.
Place the coated energy bites back on the parchment-lined baking sheet. Repeat this process for all the energy bites.
Place the energy bites back in the refrigerator for about 30 minutes, or until the chocolate coating is firm.
Once the chocolate coating has set, transfer the energy bites to an airtight container and store them in the refrigerator until ready to enjoy.
