Classic tiramisu
Prep Time: 30 minutes | Cook Time: 4 hours or overnight | Serves: 6-8 servings.
Ingredients:
For the Energy Bites:
24 ladyfinger cookies (preferably whole grain or gluten-free)
1 ½ cups strong brewed coffee, cooled
1 tablespoon Earths Basket Cacoa Powder
1 cup Greek yogurt (unsweetened)
½ cup mascarpone cheese (reduced-fat)
½ cup unsweetened almond milk or coconut milk
2 tablespoons maple syrup or honey (optional, for sweetness)
1 teaspoon vanilla extract
Dark chocolate shavings or cacao nibs, for garnish (optional)
Method:
STEP 1
In a shallow dish, combine the cooled brewed coffee and cacao powder. Stir until the cacao powder is dissolved.
STEP 2
In a separate mixing bowl, combine the Greek yogurt, mascarpone cheese, almond milk or coconut milk, maple syrup or honey (if using), and vanilla extract. Whisk until smooth and well combined.
STEP 3
Dip each ladyfinger cookie into the coffee mixture, allowing them to soak briefly on each side. Arrange the soaked ladyfingers in a single layer in the bottom of a square or rectangular serving dish.
STEP 4
Once you have a single layer of soaked ladyfingers, spread half of the yogurt and mascarpone mixture evenly over the top.
STEP 5
Repeat the process with another layer of soaked ladyfingers, followed by the remaining yogurt and mascarpone mixture.
STEP 6
Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the dessert to set.
STEP 7
Just before serving, sprinkle the top with dark chocolate shavings or cacao nibs, if desired.
STEP 8
Cut into squares or rectangles and serve chilled.
