Nutty Granola with Cacoa Nibs

3 cups rolled oats
1 cup mixed nuts (such as almonds, walnuts, cashews), chopped
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
1/2 cup unsweetened shredded coconut
1/4 cup Earths Basket Cacao Nibs
1/4 cup coconut oil, melted
1/4 cup maple syrup or honey
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
Pinch of salt
Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the rolled oats, mixed nuts, pumpkin seeds, sunflower seeds, shredded coconut, and Earths Basket cacao nibs. Mix well.
In a separate small bowl, whisk together the melted coconut oil, maple syrup or honey, vanilla extract, ground cinnamon, and a pinch of salt.
Pour the wet mixture over the dry ingredients in the mixing bowl. Stir well to ensure all the dry ingredients are coated with the wet mixture.
Spread the granola mixture evenly on the prepared baking sheet.
Bake in the preheated oven for about 25-30 minutes, or until the granola turns golden brown, stirring halfway through to ensure even baking.
Remove from the oven and let the granola cool completely on the baking sheet. It will crisp up as it cools.
