Goji Berries Chia Pudding

Ingredients:

1/2 cup Earths Basket Goji Berries

1 cup papaya or melon chunks

1/2 cup chia seeds

1 1/2 cups plant-based milk (such as almond milk, coconut milk, or oat milk)

2 tablespoons oats (gluten-free if needed)

Additional Earths Basket Goji Berries, for garnish

Method:

STEP 1

In a blender, puree the goji berries and papaya or melon chunks until smooth and well combined. Set aside.


STEP 2

In a jar or container, combine the chia seeds and plant-based milk. Stir well to ensure the chia seeds are evenly distributed in the milk.


STEP 3

Place the jar or container in the refrigerator and let the chia seeds soak for at least 2 hours or overnight. This will allow the chia seeds to absorb the liquid and form a pudding-like consistency.


STEP 4

Once the chia seeds have soaked and the mixture has thickened, remove the jar or container from the refrigerator.


STEP 5

Layer the bottom half of the jar with the pureed goji berries and papaya or melon mixture.


STEP 6

Carefully spoon the chia pudding mixture on top of the puree layer, filling the jar halfway.


STEP 7

Garnish the top of the chia pudding with oats and additional goji berries.


STEP 8

Cover the jar or container and return it to the refrigerator for at least 30 minutes to allow the flavors to meld and the oats to soften.


STEP 9

When ready to serve, give the chia pudding a stir to mix the layers together.


STEP 10

For the vegan option, use a plant-based milk and ensure your oats are gluten-free if needed. For the non-vegan option, you can use dairy milk instead of plant-based milk if desired.
