Homemade Wheatgrass Pesto

Prep Time: 10  minutes | Cook Time: 20 Minutes | Serves:  approximately 1 cup

Ingredients:

2 cups fresh basil leaves

1/4 cup pine nuts or walnuts

2 cloves garlic

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan version)

1 tablespoon Earths Basket Wheatgrass Powder

1/2 cup extra virgin olive oil

Salt and pepper to taste

Method:

STEP 1

In a food processor or blender, combine the fresh basil leaves, pine nuts or walnuts, garlic, grated Parmesan cheese (or nutritional yeast), and Earths Basket Wheatgrass Powder.


STEP 2

Pulse the ingredients a few times to break them down.


STEP 3

While the food processor is running, gradually drizzle in the extra virgin olive oil until the mixture comes together and reaches a smooth consistency.


STEP 4

Stop the food processor and scrape down the sides with a spatula, if needed.


STEP 5

Taste the pesto and season with salt and pepper according to your preference. Adjust the flavors as desired.


STEP 6

Pulse the mixture again briefly to incorporate the seasoning.


STEP 7

Once the pesto has reached your desired consistency, transfer it to a jar or airtight container.


STEP 8

Store the Homemade Wheatgrass Pesto in the refrigerator for up to one week.


STEP 9

Use the pesto as a spread, sauce, or dressing on sandwiches, pasta, salads, or any other dish of your choice.

Note: The Homemade Wheatgrass Pesto can be customized based on your taste preferences. You can add more or less Earths Basket Wheatgrass Powder depending on the intensity of wheatgrass flavor you desire. Additionally, you can adjust the amounts of garlic, Parmesan cheese, or nutritional yeast to suit your preferences.
