Healthy Green Blend Soup
Prep Time: 15 minutes | Cook Time: 25 Minutes | Serves: 4 servings
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
4 cups vegetable broth
2 cups fresh spinach leaves
1 cup frozen peas
1 medium zucchini, chopped
1 teaspoon Earths Basket Super Greens Powder
Salt and pepper to taste
Fresh coriander leaves
In a large pot, heat olive oil over medium heat.
Add chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent, about 5 minutes.
Add vegetable broth to the pot and bring it to a boil.
Reduce the heat to medium-low and add fresh spinach leaves, frozen peas, and chopped zucchini to the pot. Simmer for about 10-15 minutes, or until the vegetables are tender.
Remove the pot from heat and let it cool slightly.
Using an immersion blender or a countertop blender, blend the soup until smooth and creamy.
Return the soup to the pot and place it back on low heat.
Stir in Earths Basket Super Greens Powder and season with salt and pepper to taste. Cook for an additional 5 minutes to allow the flavors to meld together.
Ladle the Healthy Green Blend Soup into serving bowls.
For garnish, drizzle a few drops of coconut cream on top of each serving. You can use a toothpick or a small spoon to create a decorative pattern.
Sprinkle fresh coriander leaves over the soup for added freshness and flavor.
Serve the Healthy Green Blend Soup hot and enjoy!
Note: You can adjust the consistency of the soup by adding more vegetable broth if desired. Feel free to experiment with other herbs and spices to enhance the flavor profile according to your taste preferences.
