Creamy Mushroom Soup

Serving Size: 4 serving

Ingredients:

8 ounces mushrooms (such as cremini, button, or a mix), sliced

1 tablespoon Earths Basket Magic Shrooms Blend

2 tablespoons butter or olive oil

1 small onion, chopped

2 cloves garlic, minced

1 small onion, chopped

4 cups vegetable broth

1 cup heavy cream or plant-based cream substitute

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Method:

STEP 1

In a large pot, melt the butter or heat the olive oil over medium heat.

STEP 2

Add the Earths Basket Magic Shrooms blend and sauté for a minute until fragrant.

STEP 3

Add the chopped onion to the pot and cook until softened and translucent, about 5 minutes.

STEP 4

Stir in the minced garlic and cook for an additional minute.

STEP 5

Add the sliced mushrooms to the pot and cook until they release their moisture and start to brown, about 8-10 minutes.

STEP 6

Pour in the vegetable broth and bring to a boil. Reduce the heat to a simmer and let it cook for about 15 minutes to allow the flavors to meld together.

STEP 7

Using an immersion blender or in batches in a regular blender, blend the soup until smooth and creamy.

STEP 8

Return the soup to the pot and stir in the heavy cream or plant-based cream substitute. Heat the soup gently over low heat until warmed through.

STEP 9

Season with salt and pepper to taste.

STEP 10

Ladle the Creamy Mushroom Soup into bowls and garnish with fresh parsley.

STEP 11

Serve the soup hot and enjoy!
