Chlorella Tabbouleh Couscous Salad

Ingredients:

1 cup couscous

1 cup boiling water

2 tablespoons Earths Basket Chlorella powder

1 cup cherry tomatoes, halved

1 cucumber, diced

2 green chillies, finely chopped

1/2 cup fresh cilantro, chopped

2 tablespoons fresh chives, chopped

Juice of 1 lemon

3 tablespoons extra-virgin olive oil

Salt and pepper to taste

Method:

STEP 1

Place the couscous in a large bowl and pour the boiling water over it. Cover the bowl with a lid or plastic wrap and let it sit for about 5 minutes or until the couscous has absorbed the water and is tender.

Fluff the couscous with a fork to separate the grains.
