Hemp Seed Energy Balls

Prep Time:  15-25 minutes | Cook Time: 1 hours | Serves: 20 servings.

Ingredients:

1 cup pitted dates

1 cup rolled oats

1/2 cup Earth Basket Shelled Hemp Seeds

1/4 cup almond butter

2 tablespoons maple syrup or honey

1 teaspoon vanilla extract

Pinch of salt

Optional: additional hemp seeds or shredded coconut for rolling

Method:

STEP 1

Place the pitted dates in a food processor and process until they are finely chopped and form a sticky paste.

STEP 2

Add the rolled oats, hemp seeds, almond butter, maple syrup or honey, vanilla extract, and salt to the food processor.

STEP 3

Process the mixture until all the ingredients are well combined and form a sticky dough.

STEP 4

If the mixture seems too dry, you can add a tablespoon of water or more almond butter to help bind it together.

STEP 5

Scoop out small portions of the dough and roll them into balls using your hands.

STEP 6

Optional: Roll the energy balls in additional hemp seeds or shredded coconut for an extra coating.

STEP 7

Place the energy balls on a baking sheet or plate and refrigerate them for at least 30 minutes to firm up.

STEP 8

Once chilled, the Hemp Seed Energy Balls are ready to enjoy!

STEP 9

Store any leftover energy balls in an airtight container in the refrigerator for up to one week.
