Hemp Protein Loaf Cake

Prep Time: 15 minutes | Cook Time: 1-2 hours | Serves: 16 servings.

Ingredients:

1 ½ cups rolled oats

1 cup hemp protein powder

½ cup almond butter or peanut butter

⅓ cup honey or maple syrup

¼ cup Earth Basket Shelled Hemp Seeds

¼ cup chopped nuts (such as almonds, walnuts, or cashews)

¼ cup dried fruits (such as cranberries, raisins, or chopped dates)

2 tablespoons cacao nibs

1 teaspoon vanilla extract

Pinch of salt

For the coating:

½ cup granola (your choice of flavor)

2 tablespoons cacao nibs

Method:

STEP 1

In a large mixing bowl, combine the rolled oats, hemp protein powder, hemp seeds, chopped nuts, dried fruits, cacao nibs, and salt. Mix well to ensure even distribution of ingredients.

STEP 2

In a separate microwave-safe bowl, combine the almond butter or peanut butter and honey or maple syrup. Microwave for 30 seconds, or until the mixture is warm and easy to stir.

STEP 3

Remove the almond butter or peanut butter mixture from the microwave and stir in the vanilla extract.

STEP 4

Pour the wet mixture over the dry ingredients in the mixing bowl. Stir until all the ingredients are thoroughly combined and form a sticky, uniform mixture.

STEP 5

Line a baking dish or pan with parchment paper. Transfer the granola bar mixture into the pan and press it down firmly to create an even layer.

STEP 6

In a small bowl, mix together the granola and cacao nibs for the coating.

STEP 7

Sprinkle the granola and cacao nib mixture evenly over the top of the granola bar mixture in the pan, pressing it down gently to ensure it sticks.

STEP 8

Place the pan in the refrigerator for at least 1-2 hours, or until the mixture has hardened.

Once the granola bars have set, remove them from the pan and cut them into desired bar sizes or shapes.

Store the hemp protein granola bars in an airtight container in the refrigerator for up to 1 week.
