Bee Pollen Granola Bar

Ingredients:

1 ½ cups rolled oats

½ cup whole cashew nuts

½ cup almonds, roughly chopped

¼ cup Earths Basket Bee Pollen

¼ cup honey or maple syrup

¼ cup almond butter or any nut butter of your choice

¼ cup coconut oil

1 teaspoon vanilla extract

A pinch of salt

Method:

STEP 1

Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.

STEP 2

In a large mixing bowl, combine the rolled oats, whole cashew nuts, chopped almonds, and bee pollen. Mix well.

STEP 3

In a small saucepan, heat the honey or maple syrup, almond butter, coconut oil, vanilla extract, and salt over medium heat. Stir until everything is well combined and the mixture becomes smooth and slightly bubbly.

STEP 4

Pour the warm liquid mixture over the dry ingredients in the mixing bowl. Stir until all the ingredients are evenly coated and well combined.

STEP 5

Transfer the mixture into the prepared baking dish and press it down firmly using the back of a spoon or your hands to create an even layer.

STEP 6

Bake in the preheated oven for 15-20 minutes, or until the edges turn golden brown.

STEP 7

Remove from the oven and let it cool completely in the baking dish.

STEP 8

Once cooled, lift the granola bar slab out of the baking dish using the parchment paper and place it on a cutting board. Cut it into desired bar sizes.

STEP 9

Store the Bee Pollen Granola Bars in an airtight container at room temperature or in the refrigerator for longer shelf life.
