Maca Pancakes

Prep Time: 20  minutes | Cook Time: 15 minutes | Serves: 6-8 serving

Ingredients:

1 cup all-purpose flour (or gluten-free flour blend for gluten-free option)

2 tablespoons Earths Basket Maca Powder

1 tablespoon baking powder

1 tablespoon Earths Basket Coconut Sugar (or any sweetener of your choice)

1/4 teaspoon salt

1 cup plant-based milk (such as almond milk or oat milk, or dairy milk for non-vegan option)

1 tablespoon apple cider vinegar

1 tablespoon melted coconut oil (or any vegetable oil)

1 teaspoon vanilla extract

Banana slices, for topping

Healthy sweetening syrup (such as maple syrup, agave syrup, or date syrup)

Method:

STEP 1
In a large mixing bowl, whisk together the flour, maca powder, baking powder, coconut sugar, and salt.

STEP 2

In a separate small bowl, combine the plant-based milk and apple cider vinegar. Let it sit for a few minutes to curdle slightly, creating a buttermilk-like consistency.

STEP 3

Add the melted coconut oil and vanilla extract to the milk mixture and whisk together.

STEP 4

Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix, as this can result in dense pancakes.

STEP 5

Let the batter rest for about 5 minutes to allow the baking powder to activate and the mixture to thicken slightly.

STEP 6

Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface with coconut oil or cooking spray.

STEP 7

Spoon about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.

STEP 8

Repeat the process with the remaining batter, adjusting the heat as needed to prevent burning.

STEP 9

Stack the cooked pancakes on a plate, and top them with banana slices.

STEP 10

Drizzle the healthy sweetening syrup over the pancakes.

STEP 11

Serve the Maca Pancakes warm and enjoy!
