Hemp Protein Pancake
Prep Time: 10 minutes | Cook Time: 20 minutes | Serves: 4 servings.
1 cup oat flour
½ cup Earths Basket Hemp Protein Powder
2 tablespoons Earths Basket Coconut Sugar or sweetener of choice
1 teaspoon baking powder
¼ teaspoon salt
1 cup plant-based milk (such as almond milk or oat milk)
2 tablespoons coconut oil, melted
1 teaspoon vanilla extract
Fresh strawberries, sliced
Maple syrup or honey (optional, for drizzling)
In a large mixing bowl, whisk together the oat flour, hemp protein powder, coconut sugar, baking powder, and salt until well combined.
In a separate bowl, whisk together the plant-based milk, melted coconut oil, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
Heat a non-stick pan or griddle over medium heat and lightly grease with coconut oil or cooking spray.
Pour ¼ cup of the pancake batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook for an additional 1-2 minutes, or until golden brown.
Repeat the process with the remaining batter, adjusting the heat if necessary to prevent burning.
Serve the pancakes with fresh blueberries, sliced strawberries, and a drizzle of maple syrup or honey (if desired).
By using whole wheat flour or oat flour, you're incorporating healthier flour options that provide additional fiber and nutrients compared to refined white flour. These Hemp Protein Pancakes are a nutritious and delicious way to start your day. Enjoy!
