Hemp Protein Pancake

Ingredients:

Pancakes:

1 cup oat flour

½ cup Earths Basket Hemp Protein Powder

2 tablespoons Earths Basket Coconut Sugar or sweetener of choice

1 teaspoon baking powder

¼ teaspoon salt

1 cup plant-based milk (such as almond milk or oat milk)

2 tablespoons coconut oil, melted

1 teaspoon vanilla extract

Toppings:

Fresh blueberries

Fresh strawberries, sliced

Maple syrup or honey (optional, for drizzling)

Method:

STEP 1

In a large mixing bowl, whisk together the oat flour, hemp protein powder, coconut sugar, baking powder, and salt until well combined.


STEP 2

In a separate bowl, whisk together the plant-based milk, melted coconut oil, and vanilla extract.


STEP 3

Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.


STEP 4

Heat a non-stick pan or griddle over medium heat and lightly grease with coconut oil or cooking spray.


STEP 5

Pour ¼ cup of the pancake batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook for an additional 1-2 minutes, or until golden brown.


STEP 6

Repeat the process with the remaining batter, adjusting the heat if necessary to prevent burning.


STEP 7

Serve the pancakes with fresh blueberries, sliced strawberries, and a drizzle of maple syrup or honey (if desired).
