Coconut Sugar Chia Pudding

Ingredients:

1/4 cup chia seeds

1 cup coconut milk

2 tablespoons Earths Basket Coconut Sugar

1/2 teaspoon vanilla extract

Fresh fruits or nuts for topping (optional)

Method:

STEP 1

In a medium-sized bowl, combine the chia seeds, coconut milk, Earths Basket Coconut Sugar, and vanilla extract. Stir well to combine all the ingredients.


STEP 2

Allow the mixture to sit for about 5 minutes and then stir it again to prevent the chia seeds from clumping together.


STEP 3

Cover the bowl and place it in the refrigerator for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and thicken.


STEP 4

After the pudding has chilled and thickened, give it a good stir to break up any clumps. If desired, you can add a little more coconut milk to adjust the consistency to your liking.


STEP 5

Divide the coconut sugar chia pudding into two serving bowls or glasses.
