Blueberry Chia Pudding with Bee Pollen
Prep Time: 10-15 minutes | Cook Time: 2 hours or overnight | Serves: 4 serving
Ingredients:
1/4 cup chia seeds
1 cup almond milk (or any plant-based milk of your choice)
1 tablespoon Earths Basket Bee Pollen
1 tablespoon honey or maple syrup (optional, for added sweetness)
1/2 teaspoon vanilla extract
1/2 cup fresh or frozen blueberries
Additional blueberries and bee pollen for topping
Method:
STEP 1
In a bowl, combine chia seeds, almond milk, Earths Basket Bee Pollen, honey or maple syrup (if using), and vanilla extract. Mix well until all the ingredients are combined.
STEP 2
Let the mixture sit for 5 minutes, then give it another stir to prevent clumping.
STEP 3
Cover the bowl and place it in the refrigerator for at least 2 hours or overnight. This will allow the chia seeds to absorb the liquid and create a pudding-like consistency.

After the chia pudding has set, give it a good stir to break up any clumps that may have formed.
