Maca Chocolate Chip Cookies
Prep Time: 15 minutes | Cook Time: 20 minutes | Serves: 12-15 cookies
Ingredients:
1 1/2 cups gluten-free flour blend (you can use a pre-made blend or make your own with a combination of gluten-free flours like almond flour, brown rice flour, and tapioca flour)
1/4 cup Earths Basket Cacao Powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup Earths Basket Cacao Nibs
1/4 cup Earths Basket Cacao butter
1/2 cup Earths Basket Coconut Sugar or other granulated sweetener of choice
1/4 cup maple syrup or agave nectar
1 teaspoon vanilla extract
1 tablespoon Earths Basket Maca Powder
1/2 cup dairy-free chocolate chips (for vegan version) OR regular chocolate chips (for non-vegan version)
Method:
STEP 1
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
STEP 2
In a mixing bowl, whisk together the gluten-free flour blend, cacao powder, baking soda, and salt.
STEP 3
In a separate bowl, combine the melted cacao butter, coconut sugar, maple syrup (or agave nectar), vanilla extract, and maca powder. Mix well until all ingredients are incorporated.
STEP 4
Gradually add the dry ingredient mixture to the wet ingredients, stirring until a thick dough forms. Fold in the cacao nibs and chocolate chips.
STEP 5
Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart. Gently flatten each cookie with the back of a spoon or your hand.
STEP 6
Bake in the preheated oven for 10-12 minutes, or until the edges are slightly golden. The cookies will be soft when they come out of the oven but will firm up as they cool.
STEP 7
Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
STEP 8
