Hemp Protein Loaf Cake
Prep Time: 15 minutes | Cook Time: 45-55 minutes | Serves: 12 servings.
Ingredients:
1 ½ cups whole wheat flour
½ cup Earths Basket Hemp protein powder
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
½ cup coconut oil, melted
¾ cup coconut sugar or other natural sweetener of your choice
2 ripe bananas, mashed
3 large eggs
1 teaspoon vanilla extract
½ cup unsweetened almond milk (or any plant-based milk)
½ cup sliced almonds, for topping
Method:
STEP 1
Preheat your oven to 350°F (175°C). Grease a loaf pan and set it aside.
STEP 2
In a large mixing bowl, combine the whole wheat flour, hemp protein powder, baking powder, baking soda, salt, cinnamon, and nutmeg. Stir well to combine.
STEP 3
In a separate bowl, whisk together the melted coconut oil, coconut sugar, mashed bananas, eggs, vanilla extract, and almond milk until well combined.
STEP 4
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
STEP 5
Pour the batter into the greased loaf pan and smooth the top with a spatula.
STEP 6
Sprinkle the sliced almonds evenly over the top of the batter, gently pressing them in.
STEP 7
Place the loaf pan in the preheated oven and bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
STEP 8
Once baked, remove the loaf from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
STEP 9
Slice and serve the Hemp Protein Powder Loaf Cake with your favorite spreads or enjoy it as is.
